Brandy Pumpkin Soup

In a deep pan heated to medium high, add the extra virgin olive oil, diced onions, diced green pepper, minced garlic and all spices. This is your "sofrito". Cook for about 3-5 minutes until onions are translucent. Add the fresh sage. Cook for 1 minute. Add the pumpkin puree and cook for 10 minutes until all flavors are mixed thoroughly. Add the vegetable broth , cream and brandy. Mix well. Bring temperature down to low and simmer for 20-30 minutes. Taste and adjust spices as needed. Serve with corn Bread or hot Pan Cubano!
