Cuban Black Beans

Preparation Instructions:
Cover the beans with water and let stand overnight. Drain the beans and place in a large 4-6 quart pan. Add water to cover and 4 fingers width above the beans. Add olive oil ham hock,whole onion, green pepper, bay leaves, bring to a boil. Lower the temperature to medium low and simmer for about one hour covered! In the meantime sautee the sofrito in extra virgin olive oil. Add the minced garlic, and white wine. Remove the whole onion and green peppper, laurel leaves, ham hock from the pot. Add all of the remaining ingredients, stir and simmer covered for 20 minutes. Add 3-4 tablespoons of olive oil tot he black beans and ENJOY the best you've ever had!!!!! Serve over white rice, add a little chopped onion and cilantro!!!! YUM! Buen Provecho!
