Cuban Brisket - Ropa Vieja

Ingredients:

  • 3 lbs brisket beef uncooked
  • 12 cups of water
  • 1/2 cup extra virgin olive oil
  • 3 bay leaves
  • 2 tsp cumin
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 3 tsp salt
  • 3 tsp fresh black pepper
  • 2 sweet onions diced
  • 3 green bell peppers diced
  • 4 cloves of garlic crushed
  • 2 medium tomatoes diced
  • 2 cups tomato sauce
  • 1/4 cups tomato paste
  • 1 tsp Bijol
  • 1 cup dry white wine
  • 2 cups brisket water

Preparation Instructions:

Place brisket, water, 1 tsp salt, 1 tsp black pepper, 1 tsp cumin, 1 tsp. onion powder, 1 tsp garlic powder and the bayleaves in a large pot. Bring to a boil over high heat, then reduce the heat to medium and cook the beef for about 1 hour, until fork tender. Remove the beef from the pot , and set aside to let cool. Set aside the beef brisket water.

Once beef has cooled down, shred it with your hands and add thalf of the olive oil and remaing spices to it. Let stand for about 15 minutes.

In a large skillet, add the remaining olive oil. Sautee the onions, garlic, green bell peppers for about 4 minutes. Add the diced tomatos, tomatoe sauce and tomato paste. Stir for 2 minutes. Add the wine and the brisket water and cook for another 3 minutes. Add the brisket, cover and simmer for about 20 minutes! Serve over white rice with a side of Cuban Black Beans! Enjoy! Buen Provecho!
