Ham Croquettes

Servings: 12-14 medium croquettes

Mix the chunked Smoked Ham with the Parmesan Crisps, Onion, Lime Juice, Garlic, Spices and Mayonnaise. Knead for 3-5 minutes until firm. If you need to add a little more mayo or Parmesan Crisps, now is the time :)

With your hands, form mini logs, about 2 inches long and 1 inch thick. Once you have formed all your croquettes, pass them through the egg wash and dip them into the seasoned Bread Crumbs.

In a deep pan (4-5 inches deep) heat the canola oil over medium high heat. Your oil should be at 36- degrees. If you don't have a heat thermometer, test your oil by gently placing a small bit of a croquette in it. If it sizzles and fries-you are good to go!

Fry 5-6 to a batch so that the temperature remains even throughout the pan. The more elements in the pan the less heat you will get and your croquettes will be soggy and sad :(

Watch your croquettes. They cook fairly quick-3-4 minutes and " Fiesta in your mouth!" Serve them at once with your favorite aioli dip or alone. They are full of Smokey ham, Cuban spices and delicious! They will melt in your mouth! Buen provecho y Que Siga La Fiesta! Chef Marta
