Spanish Tortilla

In a separate pan, heat the vegetable oil and fry the potatoes. Sautee the onions in another pan.until translucent. Add the minced garlic, fresh thyme and fried potatoes to the onion pan. Add the seasonings and cilantro to the beaten eggs, mix together and add to the pan with the potatoes and onions.Scrape the edge of the pan toward the center so that the bottom of the tortilla starts to cook. Do this for about 3-4 minutes and then cover on medium to medium low heat for about 20 minutes or until eggs are cooked through. Pop under the broiler for about 4 minutes to brown the top. Slide off the pan by running your spatula around the pan and loosening the tortilla then! Garnish with fresh cilantro and diced roasted red peppers! Enjoy! Buen provecho!
